Chipotle Mac
A smoky, spicy mac with chipotle peppers.
Ingredients
- 8 oz farfalle pasta
- 2 cups sharp cheddar cheese, shredded
- 1 cup milk
- 1/2 cup heavy cream
- 3 chipotle peppers in adobo sauce, minced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 2 tbsp olive oil
- 1 sliced jalapeño (optional for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the farfalle pasta according to package instructions until al dente. Drain and set aside.
- In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute until golden.
- Slowly whisk in the milk and heavy cream, stirring constantly until the mixture thickens.
- Add the cheddar cheese, minced chipotle peppers, garlic powder, onion powder, cayenne pepper, salt, and pepper. Stir until the cheese is completely melted and the sauce is smooth.
- Combine the cooked farfalle pasta with the cheese sauce, mixing well to coat all the pasta.
- In a small bowl, mix the panko breadcrumbs with olive oil, and season with salt and pepper.
- Transfer the macaroni and cheese into a greased baking dish, then sprinkle the panko mixture evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and crispy.
- Let cool for a few minutes before serving. Enjoy your spicy chipotle cheddar mac and cheese!
